Stressed….

Day 252 in stumbling toward Mickey

Wow, am I ever getting preoccupied!  I completely forgot to blog yesterday.  Sorry about that. Blame it on the cancer.   I’m not sleeping very well, so I’m not running on all cylinders.  Between the stress of getting ready for the Cafe Chocolat Retreat next Saturday and then having surgery the following Monday, I have  a lot on my mind.

Yesterday I worked quite a bit on the retreat.  I worked on some of the minutiae in the morning, then I went and shopped for some of the supplies.  That was my plan, and that is what I did.

This taking on new responsibilities and stepping up to the plate is taking a toll on me, but I still think it’s a healthier way to live.

BTW:  I had a wonderful surprise when I got home from work yesterday.  My friends, the Carlson’s, sent me a Walt Disney World surprise.  It’s a Jack Skellington ornament, and it’s a lovely representation of our upcoming trip. It’s so cool!  It’s a high-heel with a bat, three pumpkins, two bones, etc… on it.  I love it!  When we finally get to Mickey’s Not-So-Scary Halloween, I’ll think of it for sure, and by association, I’ll think of the C’s!  Thanks, you guys!  That was such a sweet thing to do.  I really appreciate the boost and the smile!  Love yas!

Reserved! (Reservated? Twitterpated?)

Day 251 in the reality of Disney Dining Reservations and meeting up with Mickey (5 months and 27 days to go)

OK, so I was up at 4:30 am this morning ready to get online and make our meal reservations for October.  The online reservation system opens at 6:00 am Eastern Time, which is 5:00 am Central Time.  Am I tired now?  Oh, yeah!  But I’m jacked to have made the reservations.  It’s always a better idea to make reservations and then cancel the ones that you cannot do.

My plan for today is to share  the reservations that I was actually able to make:

Tuesday, October 13–Fly to Florida.  Dinner at Olivia’s Cafe at Disney’s Old Key West Resort (Our home away from home)at 7:15 pm

Wednesday, October 14–Breakfast at The Crystal Palace at Magic Kingdom at 8:15 am.  I had hoped for Cinderella’s Royal Table, but it wasn’t available.  I can’t be too disappointed though, because the Crystal Palace is beautiful and elegant and…oh who am I kidding…Winnie the Pooh is there!!

Thursday, October 15–Dinner at California Grill at the Contemporary Resort at 5:25 pm.  I had hoped to eat at Be Our Guest Restaurant that afternoon, but it wasn’t available.  (Fear not though it’s a-comin’.)  We have an early dinner so we can head to the Magic Kingdom for Mickey’s Not-So-Scary Halloween.  Woo hoo!

Friday, October 16–a day out of the parks.  Breakfast at Olivia’s Cafe at 10:15 am and Dinner at Artist Point at Disney’s Wilderness Lodge.  This is Mike’s favorite restaurant in Walt Disney World.  He and I have been there three times, and each time it has been a delicious, memorable, special experience.  Every time we’ve been there he has said, “We have to bring the kids here sometime.”  Maybe this will be the time.  But they are free to completely plan their own day, as they wish.

Saturday, October 17–Lunch at San Angel Inn Restaurante at EPCOT at 12:30 pm and Dinner at Tusker House Restaurant at Disney’s Animal Kingdom.  I had to swap out 50’s Prime Time Cafe at Disney’s Hollywood Studios, because of no availability  (But it’s coming later.)

Sunday, October 18–Lunch at Yak and Yeti at Disney’s Animal Kingdom at 2:00 pm.

Monday, October 19–a day out of the parks.  Mike and I will have Breakfast at Olivia’s Cafe at 10:15 am and Dinner at Raglan Road Irish Pub and Restaurant at  Downtown Disney Area at 7:15 pm. The kids plan to go to Universal Studios this day, to experience all the Harry Potter-ness of it.  😉

Tuesday, October 20–Lunch at 50’s Prime Time Cafe at Disney’s Hollywood Studios at 12:40 pm and Dinner at Be Our Guest Restaurant at Magic Kingdom at 4:55 pm.

Wednesday, October 21– Breakfast at Olivia’s Cafe at 8:00 am.  Then we fly home.

Dining at Disney World in October

Day 250 in my anticipation of all things Disney and my friend Mickey

Today’s plan was to lock down our choices for dining reservations in October.  TOMORROW WE ARE 180 DAYS OUT!!  Now any Disneyphile knows that at if you’re staying on Walt Disney World property, you can make your dining reservations 180 days out.  So after work today I quarantined myself at the computer, did some last minute research and put things in place.  Here is the plan:

Day 1 Dinner at Olivia’s Cafe at Old Key West Resort (Travel day)

Day 2 Breakfast at Cinderella’s Royal Table at the Magic Kingdom (And I want to meet up with Mickey for  photo later in the day!)

Day 3 Dinner at Be Our Guest at the Magic Kingdom

Day 4 Breakfast at Olivia’s Cafe at Old Key West Resort and   Dinner at Artist Point at Disney’s Wilderness Lodge

Day 5 Lunch at San Angel Inn at EPCOT and Dinner at 50’s Prime Time Cafe at Disney’s Hollywood Studios

Day 6 Lunch at Yak and Yeti Restaurant at Disney’s Animal Kingdom

Day 7 Breakfast at Olivia’s Cafe at Old Key West Resort and Dinner at Raglan Road Irish Pub and Restaurant at Downtown Disney

Day 8 Lunch at Tusker House at Disney’s Animal Kingdom and Dinner at Tony’s Town Square at the Magic Kingdom

Day 9 Breakfast at Olivia’s Cafe at Old Key West Resort (Travel day)

And, as if that’s not enough the EPCOT Food and Wine Festival is happening while we’re there.  I hope to spend one morning and one afternoon there to check it out.  So excited now!

Easy Chicken and Bean Stew Koo-koo-ka-choo

Day 249 in my plan to eat healthier to be more fit when I meet up with Mickey (5 months and 29 days to go)  OMGoodness!  It’s less than 6 months now.

Today my plan is to share a new recipe.  It’s from my Betty Crocker 30 Minutes Meals for Diabetes cookbook.  The recipe is for Easy Chicken and Bean Stew.  Here is the info:

Ingredients

1 tablespoon olive or canola oil

1 1/2 cups frozen bell pepper and onion stir-fry (from 1-lb bag)

1 1/2 cups diced cooked chicken

1 can (14.5 oz) Italian-style stewed tomatoes, undrained

1 can (8 oz) tomato sauce

1 can (15 to 16 oz) cannellini beans, drained, rinsed (Can use kidney beans or black beans)

2 tablespoons chopped fresh basil leaves.

Directions

  • 1 In 12-inch nonstick skillet, heat oil over medium-high heat. Add stir-fry vegetables; cook 2 to 4 minutes, stirring frequently, until crisp-tender.
  • 2 Stir in chicken, tomatoes, tomato sauce and beans. Heat to boiling. Reduce heat to medium; simmer uncovered 5 to 10 minutes, stirring occasionally and breaking up tomatoes, until thoroughly heated. Sprinkle with basil.

People, it is delicious!  And my blood-sugar level loved it, too!  Try it, you’ll like it.

Conquering Fear

Day 248 in my inner journey to Mickey (6 months to go)

My plan for today was to continue to turn away from the fear that kept me frozen and on the sidelines for so long.  I dug back into our upcoming Cafe Chocolat women’s retreat materials.  It took me about an hour and a half to read through all the materials again.  Now I feel better and more familiar with how things are put together.  I am so excited about sharing this retreat with women from my St. James family!  However, I have had a nightmare two nights  in a row, about big blunders at the retreat that were my fault.  It’s only a matter of time before I have the “standing naked in front of the group” dream.  But you know what?  It’s OK.  Because God is in charge, and he is ever faithful.  I will just keep praying for this retreat and for all those who attend it.  May God’s grace become more real for each of us.

BTW: My friend Mickey was on Dancing with the Stars tonight for Disney night.  What a treat!  Yay, Mickey!

A Wing and a Prayer

Day 247 toward being a healthier me to boogie with Mickey in October (6 months and 1 day to go)

Today’s plan was to go to worship and work on a healthier spiritual side.

It was a bright and early morning, because we had to be at the church at 7:30 am for a rehearsal.  Our contemporary band, Damascus Road, was playing the 8:30 am service.  It is such a pleasure to play with this bunch of folks.  Each so talented, and so dedicated to Jesus.  We were playing on a wing and prayer.  We were supposed to rehearse last Thursday evening, but because of the crazy, tornado-y weather I cancelled the rehearsal.  So this morning it was all or nothing.  God showed up and met us there, as he promises to do, and it was a wonderful service of prayer and praise.

The Spirit always meets us at communion, and today was no exception.  I am forever grateful to the God who loves us so much that he gave his Son for us.  Thank you, thank you, thank you!

To Market, To Market…

Day 246 in my exciting adventure of getting ready to meet up with Mickey

My plan for today was to go and grocery shop on my own and get us ready for the week ahead.  I was worried about going because I am having a lot of hip pain.  But, I thought, don’t let a little pain stop you.  Go and do.  So I did.  I painfully limped into the store.  But, wonder of wonders, I found that if I leaned onto the grocery cart, my hip did not bother me. Hooray!

I picked up groceries for Chicken and Bean Stew, Chunky Vegetable Chowder, Grilled Tuna and Low-fat Provolone with Veggies, and because I love my husband and he loves spaghetti, Spaghetti with Whole Wheat Noodles and Veggie Sauce.

It feels so good to get re-engaged with planning and preparing healthy, low-sugar, low-fat meals.  And the bonus of shopping by myself is I got a lot more steps in than I would have otherwise.

The sun is shining and the temperature made it to nearly 70 degrees today here in Lake Bluff.  Life is good, and God is even better.  (That is a loose paraphrase of Philippians 1:21)

Confession Time

Day 245 in my muddling my way to Mickey

My plan today was to step on the scale to get an idea of what’s up.  So I did the deed this morning and was shocked to see that I have gained a few pounds.  Not surprised, but still shocked to actually see the number.  They say that relapse is a part of recovery.  Alcoholics often drink on their way to recovery.  Drug users use.  Smokers smoke.  (My own son told me he had to quit smoking four times before it really worked.)  And, apparently, eaters eat.

In my cancer pity-party, I let my guard down and made some bad choices.  And for every bad choice I made, I felt ill…actually physically ill.  I find I am tired, just plain weary, when I don’t eat well.  So back to plenty of fresh veggies, lean proteins, complex carbs, and lots of water.

I am sugar-free, so at least I have that going for me.  🙂  It is my BIGGEST addiction.

Scare Me, Mickey!

Day 244 in my hankering for hauntings at the Magic Kingdom when I meet up with Mickey (6 months and 4 days to go)

As I was eating my lentil soup at lunch today, I was checking out Facebook.  I was just about finished eating when I saw a post from Disney Dining that said “Tickets on Sale Today for Hard Ticket Events.”  And below it said, “Tickets on sale today for Mickey’s Fall Events!  GAH!  I quickly swallowed the last of my soup and made a mad dash for my office.  I logged onto My Disney Experience and booked our tickets for Mickey’s Not So Scary Halloween Party on October 15.

That was not my plan for today to get ready for Walt Disney World in October, but it quickly became my plan!

This trip has always been something to look forward to, but now with my health issues, it has become a finish line of sorts.  When we are there and celebrating being together in the Happiest Place on Earth, I will be beyond the moon!  Woo hoo!

And speaking of health issues, my doctor called with good news for a change.  My thyroid biopsy shows that the nodules on my thyroid are benign.  What a lovely word…benign.  🙂

Beginning Again

Day 243 in my dash toward Disney and Mickey

The thing about having cancer is: it makes it so easy to feel sorry for yourself.  I want to make a concerted effort to STOP.  I don’t accept that cancer is now my life.  NO.  Philippians 1:21 says, “For me to live is Christ, and to die is gain.”  So cancer is not my life; Christ and opportunities for him, are my life.

Today I rededicate myself to healthier living.  I will plan the next week’s menu.  I have to get back to more veggies, lean proteins and complex carbs.

No more pity eating.  No more giving in to sympathy pains in other parts of my body.  No more.  Nope!

Today is the day that I reclaim my life.  Meet you at the Kingdom!
